February flew by at The Cracked Peppercorn. We had an amazing Valentines Day, in fact because it was on a Sunday this year, we had 2 Valentine's Days. We introduced our new wine menu as well in February. People are really liking the different wines being offered. If you have a good sense of humor, you will have to come in and try to keep a straight face while you order a bottle of Fat Bastard from France or a bottle of Cat's Pee on Gooseberry Bush from New Zealand.

At the end of February, my kids and I were able to participate in the Big Brothers and Big Sisters Bowl for Kids Sake event - what a great time and for a very important cause. The Cracked Peppercorn Steak Lounge is a proud supporter of The Big Brothers and Big Sisters Organization of Medicine Hat - join us for Brunch on Sundays - $1.00 from each adult brunch sold is donated to The Big Brothers and Big Sisters of Medicine Hat.

St. Patrick's Day is almost here!!! Stop by and see us before the pub.

This March 17th, join us at The Cracked Peppercorn for An "Irish Steak Sandwich"

If you have been coming in on Thursdays to watch Rob Hudec perform, then you will have heard of, or tried one of our very unique and ethnic twists on the all time classic steak sandwich.

To date we have done:
  • The Louisiana - With an Alligator and white wine sauce, served with cajun pepper and bacon mashed potatoes.
  • The Indian- Tandoori mashed potatoes with garlic naan bread and a Cinamonn Banana curry sauce
  • The German- Seasoned ground beef and mashed potatoes rolled in a cabbage leaf (like a cabbage roll) Dark german rye garlic bread and an apple schnapps & Duesseldorf mustard sauce
  • The Greek- Roasted red pepper and feta mashed potatoes, garlic pita bread, fresh tzatziki sauce and grilled vegetable souvlaki.
In honor of St Patrick, it is now time to create an Irish version!

We will start with an 8oz Certified Angus Beef sirloin topped with a Garlic and Guinness Cream sauce. We'll serve it with traditional Colcannon mashed potatoes and Irish soda bread toasted and brushed with our garlic herb butter

Can you think of a better way to line your stomach before a long night at the pub?!?

Group Bookings and Parties


The Cracked Peppercorn also does off-site Catering and can accomodate your group event in our dining room. Our dining room is huge - it can seat up to 200 guests. Our Chef can tailor a unique menu specific to your group - we can provide a Buffet, a set Table D'hote Menu or we can accomodate large groups ordering straight from our menu. - Please call Amy Berning at 403-526-0829 to discuss your next Function.

Remember there is no charge to have our dining room or sideroom, which can be completely shut off from the rest of the dining room if your group requires a more private venue, for your event.

Our Community


Help us help local charities:

1 - We offer a Brunch every Sunday from 10am to 2pm at The Cracked Peppercorn. $1.00 from each Brunch sold is donated to The Big Brothers and Big Sisters Organization of Medicine Hat.

2 - Help Expand Our Thankful Tuesday Program:

Through the thankful Tuesday program, local charities can reserve The Cracked Peppercorn’s dining room, in whole or a portion (our dining room can accomodate up to 200 guests), on a Tuesday evening to hold a fund-raising event. The Cracked Peppercorn will donate the use of our facility and also make a cash contribution equal to 15% of all food and beverage purchases by the organization’s guests that evening. There is NO charge for the space, we set up, we tear down and we match what you raise up to 15% (from your guests' purchases at our restaurant).

Message from The Chef


If you have been following along with the past newsletters, you now know:
  • How to pick the perfect steak and
  • How to cook it.
Now, how to serve it??

As a Saucier Chef, I believe no piece of meat is ready to serve without a great sauce. Here are a some of my favorite, quick and easy recipes:

Red Wine Jus

On medium heat in a medium sized sauce/soup pot add 4 tbsp of canola oil and 1/4 cup of small diced red onion. When onion starts to get soft add 1 tbsp of chopped garlic cook for 1 minute and add 1/4 cup of red wine, 1/4 cup of beef broth or beef consume and simmer until reduced by half.

Peppercorn Sauce:

Cook onion and garlic as above. Add 2oz of Brandy (optional), 1 tbsp of pickled green peppercorns- do not use dried peppercorns as they will be tough to eat- salt and pepper to your preferred taste, 1/2 cup of beef broth or consume and 1/4 cup of whipping cream. Let this simmer until it has reduce by about 1/2 or your desired thickness. If you really like your sauce spicy add as much ground black pepper as you like.

Bacon and Mushroom Sauce:


Start the preperation for the peppercorn sauce just substitute 1/4 cup chopped bacon and 1/2 chopped mushrooms-portobella are best in my opinion- and cook thouroghly. Drain excess fat and add the beef broth and cream. Reduce until desired thickness is reached.

When cooking mushrooms, especially portobella, you may need to add more cooking oil as the mushrooms act as a sponge and suck it up. In this recipe start the bacon before the mushrooms allowing the bacon fat to melt and coat the pan. This way the bacon flavour is absorbed by the mushrooms.
